Bang Bang Chicken Salad

PREPARATION:

Chicken served on a crisp and tangy, lime & sesame dressed salad with a spicy, sweet and hot peanut sauce. Ideal as a starter or appetiser for 4, or a great main course for 2 people. Mix all the salad ingredients together, toss in the lime and sesame oil then arrange on 4 plates, top each with ¼ of the sliced chicken and set aside. Add the oil to a small saucepan then add the onion, cook for 3-4 minutes then add the chilli, garlic and ginger and stir 1 minute. Now add the water, peanut butter, Hermesetas Granulated and soy sauce, stir until everything has dissolved. Drizzle the sauce over the chicken and salad then sprinkle with sesame seeds. Serve with lime wedges.

TOP TIPS
You could also use cooked pork, turkey, salmon or prawns in place of chicken. For a veggie (or vegan) version use marinated tofu pieces or chunks of meat alternative. Look for unsweetened, natural peanut butter as some brands contain salt and sugar.
